I thought I would share these now so in case you want to try them you can.
DISCLAIMER.The recipes are ones friends have shared with me and I do not know the original author of them...
Bourbon Brined Turkey:
Brine:
Combine in a large pot or container:
Enough water to fully cover the turkey when submerged.
-½ cup of salt and 1/2 cup brown sugar p. gallon of water (desolve).
-1 cup of bourbon p. gallon of water
Wash turkey inside and out, and fully submerge in container.
-Cut 3 Oranges in quarters, squeeze the juice in and throw the quarters in as well
-Add 2 whole rosemary stems
-Add 2 whole Thyme stems
Leave turkey in brine for at least 4 but no more then 20 hours (over night is best).
Take turkey out of brine and dry thoroughly.
Place into roasting pan.
Rub bird with halves of 2 Oranges.
Take lots of soft butter and rub all over bird as well.
Take another stick of soft butter and shove it under the skin of the turkey breast.
In a bowl combine:
-above orange halves
-2 large onions coarsely chopped
-2 celery stalks chopped
-2 carrots coarsely copped
-A couple of bay leaves.
-Fresh sage
-½ cup of parsley
-Bundle of Thyme and Rosemary
Mix it all up and shove it into the turkey.
Salt and pepper on the bird.
Tie up the legs with kitchen string.
Stick into the oven at 400 degrees for 45 min.
Turn down to 350 degrees and cook until thermometer reads 170 degrees.
Bacon Wrapped Green Beans
Clean fresh green beans and blanch in boiling, salted water for 3 min.
Take Beans out and put in ice bath for brighter colors.
Toss beans in mixing bowl with fresh ground pepper and a little olive oil.
Take 8 – 10 beans in a bundle and wrap a slice of bacon around them.
Repeat with all beans and place on baking sheet.
Cook in oven at 425 Fahrenheit for 20 min. or until bacon is cooked.
(I use frozen ones and just wrap them and bake.)
Crockpot stuffing
-1 cup butter or margarine
-2 cups chopped onion
-2 cups chopped celery
-1/4 cup parsley sprigs
-12 cups bread cubes, slightly dry
-1 teaspoon poultry seasoning
-2 eggs, well beaten
-1 1/2 teaspoons salt
-1 1/2 teaspoons sage
-1 teaspoon thyme
-1/2 teaspoon pepper
-1/2 teaspoon marjoram
-3 1/2 cups chicken broth or turkey broth
Melt butter in a skillet and saute onion and celery until they are tender. The onion will start to turn translucent. Add the parsley and pour the mixture over the bread cubes. I put the bread cubes in a large mixing bowl first. Add the seasonings and stir well. Add the broth and eggs and mix until everything is well combined. Scoop it into the crockpot and cook on high for 50 minutes, then turn to low and cook 4 hours.
